This delicious lamb rack is seasoned and roasted to perfection, paired with a vibrant and fresh green salsa verde. It's a perfect dish for special occasions or a delightful family dinner.
Ingredients:
- 1 kg lamb rack
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp salt
- 1 tsp black pepper
- Juice of 1 lemon
- 1 dl fresh parsley, chopped
- 1 dl fresh basil, chopped
- 50 g capers
- 2 tbsp white wine vinegar
- 1 can beans (e.g., white or kidney beans)
- 200 g sausage, sliced
- 2 tomatoes, diced
- 1 dl water
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Rub the lamb rack with olive oil, minced garlic, salt, and black pepper.
3. Place the lamb rack in a roasting pan and squeeze lemon juice over the top. Roast in the oven for about 1.5 hours, or until the meat is tender.
4. Prepare the salsa verde: In a bowl, combine parsley, basil, capers, white wine vinegar, and a pinch of salt. Add olive oil as needed until you achieve your desired consistency.
5. In a skillet, heat a little oil and sauté the sliced sausage until golden brown. Add the beans, tomatoes, and water. Simmer for about 10 minutes.
6. Serve the lamb rack warm with the green salsa verde and the bean-sausage-tomato mixture. Enjoy!
