Serving Size: 4-6 servings
Ingredients:
- 1 kg roast lamb
- 2 tablespoons olive oil
- 3 garlic cloves, crushed
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and black pepper to taste
Salsa Verde Sauce:
- 1 cup fresh parsley, chopped
- 1/2 cup fresh basil, chopped
- 2 tablespoons capers, finely chopped
- 2 garlic cloves, crushed
- 1 tablespoon red wine vinegar
- 1 cup olive oil
- Salt and black pepper to taste
Instructions:
1. Preheat the oven to 180 °C (350 °F).
2. Season the roast lamb with olive oil, crushed garlic, rosemary, thyme, salt, and pepper. Rub the spices well into the meat.
3. Place the roast in a baking dish and roast in the oven for about 1 hour, or until the internal temperature of the meat reaches 60-65 °C (140-150 °F) for medium.
4. Remove the roast from the oven and let it rest under foil for about 10-15 minutes before slicing.
5. Prepare the salsa verde: In a bowl, mix all the ingredients. Gradually add olive oil until the mixture is smooth. Season with salt and pepper.
6. Slice the roast lamb and serve with the salsa verde sauce.
