A fresh and delicious green tomato salsa that comes together quickly, perfect as a side for grilled dishes or as a filling for tacos. Preparation Time: 20 minutes
Serving Size: 4-6
Ingredients:
- 500 g green tomatoes
- 1 small onion
- 1-2 cloves garlic
- 1-2 green chilies (to taste)
- Juice of 1 lime
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro (optional)
Instructions:
1. Rinse the green tomatoes and cut them into quarters.
2. Peel and chop the onion and garlic.
3. Remove the seeds from the chilies and finely chop them.
4. In a pot, combine the tomatoes, onion, garlic, and chili.
5. Add the lime juice, salt, and black pepper.
6. Heat the mixture over medium heat and simmer for about 10-15 minutes until the tomatoes are softened.
7. Remove the pot from heat and let the salsa cool slightly.
8. If desired, chop fresh cilantro and mix it into the salsa.
9. Serve the salsa immediately or store it in the refrigerator.
