Vegetable Rice Stew

Serving Size: 4 servings
Ingredients:
- 4 dl rice
- 1 l water
- 1 tsp turmeric
- 2 tbsp curry paste
- ½ dl rapeseed oil
- 2 carrots, peeled and sliced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 garlic cloves, crushed
- Salt and pepper to taste
Instructions:
1. Heat the rapeseed oil in a large pot over medium heat. Add the chopped onion and crushed garlic, sauté for about 3-4 minutes.
2. Add the sliced carrots and diced bell pepper, and continue to sauté for another 5 minutes.
3. Stir in the rice until well combined. Pour in the water, turmeric, and curry paste. Mix all the ingredients together.
4. Bring the mixture to a boil, then reduce the heat and cover. Let it simmer for about 15-20 minutes or until the rice is cooked and the liquid has been absorbed.
5. Season with salt and pepper to taste. Serve warm.
