A tasty alternative for lunch or dinner, these veggie patties are easy to make and full of flavor. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 cup cooked chickpeas
- ½ cup oats
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
- Fresh parsley, chopped (optional)
Instructions:
1. In a bowl, mash the cooked chickpeas with a fork or potato masher.
2. Add oats, onion, garlic, bell pepper, cumin, paprika, salt, and pepper to the mashed chickpeas. Mix well.
3. Form the mixture into patties, about 2 inches in diameter.
4. Heat olive oil in a frying pan over medium heat.
5. Fry the patties for about 4-5 minutes on each side, until golden brown.
6. Serve warm with salad or yogurt sauce.
