Ingredients:
- 1 onion, chopped - 1 cup grated vegetable 1 (e.g., carrot, pumpkin, squash)
- 2-4 slices of bacon (optional)
- 1 cup grated cheese (sharp cheddar or parmesan)
- 1 cup grated vegetable 2 (e.g., bell pepper, cherry tomato, a bit of spinach)
- 1 cup grated vegetable 3 (e.g., zucchini, corn)
Instructions:
1. Preheat the oven to 180°C (350°F) and prepare a muffin tin (grease or use paper liners). 2. Sauté the onion in a pan over medium heat until softened.
3. Add the bacon (if using) to the pan and cook until crispy.
4. In a bowl, combine the sautéed onion, bacon, grated vegetables, and cheese.
5. Mix all the ingredients well and divide the batter into the muffin tin.
6. Bake in the oven for about 25-30 minutes or until the muffins are golden brown and cooked through.
7. Allow to cool slightly before serving.
