Deliciously surprising muffins made easily from melted ice cream. A great way to use up leftover ice cream in your freezer. Preparation Time: 30 minutes
Serving Size: 12 muffins
Ingredients:
- 1 ¼ cups melted vanilla ice cream - 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup sugar
- 1 large egg
- ½ cup milk
- ½ cup oil
- (optional: chocolate chips or nuts)
Instructions:
1. Preheat the oven to 350°F (or 320°F for convection). 2. In a bowl, mix together the flour, baking powder, baking soda, salt, and sugar.
3. Add the melted ice cream, egg, milk, and oil to the dry ingredients. Stir until well combined.
4. If desired, fold in chocolate chips or nuts into the batter.
5. Divide the batter into muffin cups, filling each about ⅔ full.
6. Bake in the oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
7. Allow to cool slightly before serving.
