This delicious lamb stew is full of flavor and warmth. It's the perfect dish for cold days and is easily prepared in one pot. Preparation Time: 2 hours
Serving Size: 4-6 servings
Ingredients
- 1 tbsp butter - 1200 g lamb, cubed
- 1 tbsp mustard
- 4 potatoes, cubed
- 0.5 tsp black pepper
- 3 carrots, sliced
- 1 tbsp finely chopped fresh parsley
- 0.5 tsp salt
- water
- 3 large onions, chopped
- 170 g American bacon, diced
- 1-2 sprigs of thyme
Instructions
1. Heat the butter in a large pot and add the bacon. Cook until the bacon is crispy. 2. Add the lamb and brown it on all sides.
3. Stir in the mustard, black pepper, and salt.
4. Add the onions and carrots, sauté for a few minutes.
5. Incorporate the potatoes and thyme sprigs. Pour in enough water to cover the ingredients.
6. Allow the stew to simmer on low heat for about 1.5 hours, until the meat is tender and the potatoes are cooked.
7. Remove the thyme sprigs and sprinkle fresh parsley on top before serving.
