A delicious creamy cheesecake with a biscuit base.
Preparation Time: 20 minutes (plus chilling time)
Serving Size: 10 servings
Ingredients
- BASE
- 175 g digestive biscuits
- 75 g baking margarine
- FILLING
- 6 gelatin sheets
- 5 dl whipping cream
- 400 g plain cream cheese
- 2 dl sugar
- 1 tsp vanilla sugar
- 1 dl lemon juice
Instructions
1. Crumble the digestive biscuits finely and melt the baking margarine. Combine the biscuit crumbs with the melted margarine.
2. Press the biscuit mixture firmly into the bottom of a springform pan.
3. Soak the gelatin sheets in cold water for about 5 minutes.
4. Whip the cream until fluffy.
5. In a separate bowl, mix the cream cheese, sugar, vanilla sugar, and lemon juice until smooth.
6. Heat a small portion of the whipped cream in a saucepan, add the drained gelatin sheets, and stir until dissolved.
7. Add the gelatin mixture to the cream cheese mixture and mix well.
8. Gently fold the whipped cream into the cream cheese mixture.
9. Pour the filling over the biscuit base and smooth the surface.
10. Allow the cheesecake to set in the refrigerator for at least 4 hours or overnight.
11. Decorate if desired before serving.
