A delicious and creamy cheesecake with a fruity berry twist. Preparation Time: 20 minutes + 4 hours chilling
Serving Size: 8 servings
Ingredients:
- 15 Digestive biscuits
- 75-100 g butter (melted)
- 2 dl cottage cheese
- 2 dl sour cream
- 1 dl gelling sugar
- 2 dl berries (e.g., blueberries or raspberries)
Instructions:
1. Crumble the Digestive biscuits finely and mix with the melted butter.
2. Press the biscuit mixture firmly into the bottom of a springform cake pan.
3. In a bowl, combine the cottage cheese, sour cream, and gelling sugar until smooth.
4. Gently fold the berries into the mixture.
5. Pour the filling over the biscuit base and smooth the top.
6. Allow the cheesecake to chill in the refrigerator for at least 4 hours or overnight.
7. Optionally, decorate with additional berries before serving.
