Serving Size: 12 servings

Ingredients:

- 200 g digestive biscuits
- 100 g butter
- 600 g cream cheese
- 150 g sugar
- 3 eggs
- 200 ml heavy cream
- 1 tbsp vanilla sugar
- 2 tbsp lemon juice

Instructions:

1. Crush the digestive biscuits into fine crumbs and mix with melted butter.
2. Press the biscuit mixture firmly into the bottom of a springform pan and refrigerate to set.
3. Beat the cream cheese and sugar together until smooth.
4. Add the eggs one at a time, mixing well after each addition.
5. Incorporate the heavy cream, vanilla sugar, and lemon juice. Mix until all ingredients are well combined.
6. Pour the filling over the biscuit base and smooth the top.
7. Bake in a preheated oven at 160°C (320°F) for about 50-60 minutes, until the filling is set.
8. Let it cool at room temperature, then transfer to the refrigerator for at least four hours or overnight.
9. Serve plain or with a berry sauce if desired.
