A delicious and quick Italian dish that combines pasta, eggs, and bacon into a flavorful meal. Preparation time: 20 minutes. Serving size: 4.
Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or guanciale
- 3 egg yolks
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions, ensuring it remains al dente.
2. While the pasta cooks, chop the bacon into small pieces and fry it in a pan over medium heat until crispy. Add the minced garlic during the last minute of cooking.
3. In a bowl, whisk together the egg yolks and grated Parmesan cheese. Add black pepper to taste.
4. Once the pasta is cooked, drain it and toss it with the bacon and garlic in the pan.
5. Remove the pan from heat and quickly mix in the egg yolk mixture, stirring rapidly to prevent the eggs from scrambling.
6. Serve immediately, garnished with fresh parsley, and add more salt and black pepper as needed.
