A refreshing and creamy dessert inspired by the classic mojito cocktail. Perfect for summer gatherings! Preparation Time: 30 minutes (plus chilling time)
Serving Size: 8 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 300 g cream cheese
- 200 g quark
- 100 g sugar
- 200 ml heavy cream
- Juice and zest of 1 lime
- 100 g fresh mint, chopped
- 1 tsp vanilla sugar
- 10 g gelatin
- 50 ml water
Instructions:
1. Crush the digestive biscuits and mix them with the melted butter. Press the mixture into the bottom of a springform pan.
2. In a bowl, beat together the cream cheese, quark, sugar, lime juice, lime zest, and chopped mint until smooth.
3. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the cheese mixture.
4. Soak the gelatin in water and heat gently until fully dissolved. Stir it into the cheese mixture.
5. Pour the cheese mixture over the biscuit base and smooth the top.
6. Allow the cheesecake to set in the refrigerator for at least 4 hours or overnight.
7. Before serving, garnish with mint leaves and lime slices.
