A refreshing mojito cheesecake with mint and lime flavors that brings a summery vibe. This treat is a perfect ending to any meal!
Preparation Time: 30 min + 3 hours in the fridge
Serving Size: 8-10 servings

Ingredients:

- 200 g digestive biscuits
- 100 g butter
- 300 g cream cheese
- 200 g quark
- 1 dl sugar
- 1 dl cream
- Juice and zest of 1 lime
- 1 dl fresh mint, chopped
- 3 gelatin leaves
- 0.5 dl water

Instructions:

1. Crumble the digestive biscuits and mix them with the melted butter. Press the mixture firmly into the bottom of a springform pan.
2. Soak the gelatin leaves in cold water for about 5 minutes. Heat the water in a saucepan, squeeze out excess water from the gelatin leaves, and dissolve them in the hot water.
3. In a mixing bowl, beat together the cream cheese, quark, sugar, lime juice and zest, and chopped mint.
4. Add the gelatin water to the filling and mix well.
5. Whip the cream and gently fold it into the filling.
6. Pour the filling over the biscuit base and smooth the surface. Let the dessert set in the fridge for at least 3 hours.
7. Optionally, garnish with mint leaves and lime slices before serving.
