A creamy Finnish cheesecake that is light and delicious, perfect for any occasion.
Preparation Time: 1 hour (plus chilling time)
Serving Size: 8 servings
Ingredients
- BASE:
- 75 g butter
- 1 dl sugar
- 1 egg
- 2.5 dl all-purpose flour
- 2 tsp baking powder
- FILLING:
- 1 can (approximately 250 g) quark
- 2 dl cream
- 1 dl sugar
- 2 tsp vanilla sugar
- 2 eggs
Instructions
1. Preheat the oven to 175°C (350°F).
2. Melt the butter and mix it with the sugar in a bowl.
3. Add the egg and mix well.
4. Combine the flour and baking powder, then add to the mixture. Stir until smooth.
5. Pour the batter into a greased pie dish and bake in the oven for about 15-20 minutes, until the base is golden brown.
6. For the filling, whip the cream and mix it with the quark, sugar, vanilla sugar, and eggs.
7. Pour the filling over the baked base and bake in the oven for another 30-35 minutes.
8. Let the cake cool at room temperature, then transfer to the refrigerator for at least a few hours, or preferably overnight, before serving.
