A delicious cheesecake that enchants with its soft filling and crunchy base. Preparation time is about 30 minutes + chilling time in the fridge. Serves 12.

Ingredients

Base:
- 170 g biscuits
- 75 g margarine
Filling:
- 200 g cream cheese
- 1.25 dl sugar
- 2 egg yolks
- 2 eggs
- 1 tsp vanilla sugar
- 2 dl whipped cream

Instructions

1. Crush the biscuits and melt the margarine. Mix the crushed biscuits and margarine thoroughly together.
2. Press the biscuit mixture firmly into the bottom of a springform pan.
3. In a bowl, beat the cream cheese and sugar until smooth.
4. Add the egg yolks, eggs, and vanilla sugar to the mixture, and mix until all ingredients are well combined.
5. Whip the cream and gently fold it into the cheese mixture.
6. Pour the prepared filling over the biscuit base and smooth the surface.
7. Allow the cheesecake to set in the fridge for at least one hour before serving.
