Ingredients:

- 1 ½ cups jasmine rice (cooked)
- 1 tablespoon red curry paste
- ½ cup fresh pineapple (diced)
- ½ cup bell pepper (diced)
- ½ cup cucumber (diced)
- ½ cup peas (fresh or frozen)
- 2 tablespoons soy sauce
- 2 tablespoons oil (such as coconut oil)
- 2 garlic cloves (minced)
- 2 green onions (chopped)
- Salt and pepper to taste

Instructions:

1. Heat the oil in a large frying pan or wok over medium heat.
2. Add the minced garlic and chopped green onions, sautéing for about a minute.
3. Add the red curry paste to the pan and mix well.
4. Add the cooked jasmine rice to the pan and combine all ingredients thoroughly.
5. Stir in the pineapple, bell pepper, cucumber, and peas. Cook for another 5-7 minutes until all ingredients are heated through.
6. Season with soy sauce, salt, and pepper. Mix well and serve immediately.
