This delicious chicken pasta is quick and easy to prepare, perfect for a weeknight dinner.

Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 400 g chicken fillets
- 2 tablespoons olive oil
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 400 g canned crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 100 g grated Parmesan cheese
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and save a bit of the cooking water.
2. Cut the chicken fillets into small pieces and season with salt and pepper.
3. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened.
4. Add garlic and bell pepper, and cook for a few more minutes.
5. Add the chicken pieces to the skillet and cook until fully cooked.
6. Pour in the crushed tomatoes and add oregano. Let it simmer on low heat for about 5 minutes.
7. Stir in the cooked pasta with the sauce. Add a splash of reserved cooking water if the mixture is too dry.
8. Serve the pasta on plates, topped with grated Parmesan cheese and fresh basil.
