A delicious and nutritious vegetable soup perfect for cold days. It's easy to make and packed with vegetables.

Ingredients:

- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 medium carrots, diced
- 2 celery stalks, sliced
- 1 potato, diced
- 1 liter vegetable broth
- 1 can (400 g) diced tomatoes
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 150 g green beans, chopped
- 100 ml cream (optional)
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until soft.
2. Add carrots, celery, and potato. Cook for about 5 minutes until the vegetables start to soften.
3. Pour in the vegetable broth and diced tomatoes. Add thyme, salt, and black pepper. Bring to a boil, then reduce heat. Let the soup simmer for about 15 minutes.
4. Stir in the green beans and cook for another 5 minutes, until all vegetables are tender.
5. If desired, stir in cream before serving.
6. Serve the soup warm and garnish with fresh parsley.
