A refreshing and hearty summer soup filled with fresh vegetables and basil. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 zucchini - 2 carrots
- 1 potato
- 1 onion
- 200 g green beans
- 200 g tomatoes
- 1 liter vegetable broth
- 200 g pasta (e.g., small macaroni)
- 100 ml fresh basil
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Peel and chop the onion, carrots, and potato. 2. Heat the olive oil in a large pot and sauté the onion until it is soft.
3. Add the carrots, potato, and green beans. Sauté for a few minutes.
4. Add the zucchini and tomatoes. Mix well.
5. Pour the vegetable broth into the pot and bring the soup to a boil.
6. Add the pasta and cook until the pasta is tender (about 8-10 minutes).
7. Season with salt and pepper.
8. Remove the soup from the heat and stir in the chopped basil.
9. Serve hot and enjoy!
