A delicious mushroom soup that combines the flavors of the forest with sherry wine, making it a perfect appetizer or light main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g fresh chanterelle mushrooms
- 1 onion
- 2 garlic cloves
- 1 potato
- 1 l vegetable broth
- 100 ml sherry
- 2 tbsp olive oil
- Salt and pepper to taste
- Parsley for garnish
Instructions:
1. Peel and chop the onion, garlic, and potato.
2. Heat the olive oil in a pot and add the onion and garlic. Sauté until soft.
3. Add the chopped mushrooms and potato to the pot. Sauté for a few minutes.
4. Pour in the vegetable broth and simmer the soup for about 15-20 minutes, until the potato is tender.
5. Blend the soup with an immersion blender or regular blender until smooth.
6. Stir in the sherry and season with salt and pepper. Heat for a moment longer.
7. Serve the soup garnished with parsley.
