A delightful mushroom soup made with chanterelles, porcini, and other mushrooms. Perfect as an appetizer or a light main course! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g chanterelles
- 200 g porcini mushrooms
- 200 g porcini
- 1 onion
- 2 garlic cloves
- 1 liter vegetable broth
- 200 ml cream
- 2 tablespoons butter
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Clean the mushrooms and cut them into small pieces.
3. Heat the butter in a pot and add the onions. Sauté until the onions are soft.
4. Add the mushrooms to the pot and cook for a few minutes until they are tender.
5. Pour the vegetable broth into the pot and let the soup simmer for about 10 minutes.
6. Stir in the cream and mix well. Heat the soup but do not boil it again.
7. Season with salt and black pepper to taste.
8. Serve the soup hot, garnished with fresh parsley.
