A delicious and fragrant soup filled with fresh mushrooms and Asian flavors. Perfect as a light starter or a warming dish. Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 200 g fresh mushrooms (e.g., button mushrooms or shiitake mushrooms)
- 1 liter vegetable broth
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 clove garlic, crushed
- 1 cm fresh ginger, grated
- 2 spring onions, chopped
- 1 red chili, finely chopped (optional)
- Fresh cilantro leaves for garnish
Instructions:
1. Clean and slice the mushrooms.
2. Heat the sesame oil in a pot over medium heat.
3. Add the crushed garlic, grated ginger, and chopped chili. Sauté for about a minute.
4. Add the mushrooms and cook until they are soft.
5. Pour in the vegetable broth and add the soy sauce and rice vinegar. Bring to a boil.
6. Lower the heat and let the soup simmer for about 10-15 minutes.
7. Stir in the chopped spring onions just before serving.
8. Serve the soup hot and garnish with fresh cilantro leaves.
