Ingredients:
- 4 medium potatoes, diced - 1 large onion, chopped
- 2 carrots, sliced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 100 ml cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Heat the butter in a large pot over medium heat. Add the onion and sauté until soft. 2. Add the potatoes, carrots, and bell pepper to the pot. Sauté for a few minutes.
3. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 20 minutes, until the vegetables are tender.
4. Blend the soup with an immersion blender or in a blender until smooth.
5. Stir in the cream and mix well. Heat the soup again, but do not boil.
6. Season with salt and pepper. Serve with fresh herbs on top.
