Spicy Sweet Chili Salmon with Fiery Cabbage Salad

Ingredients:
- 400 g salmon fillet
- 3 tbsp sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp fresh ginger, grated
- 1 tsp garlic, minced
- ½ cabbage, shredded
- 1 red bell pepper, sliced
- 1 chili, finely chopped (to taste)
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 200°C (400°F).
2. In a bowl, mix together sweet chili sauce, soy sauce, lime juice, ginger, and garlic.
3. Place the salmon fillet in a baking dish and pour the marinade over it. Allow it to marinate for about 15 minutes.
4. Bake the salmon in the oven for 15-20 minutes, until it is cooked through and beautifully golden brown.
5. In the meantime, prepare the cabbage salad by combining shredded cabbage, bell pepper, and chili in a large bowl.
6. For the dressing, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
7. Pour the dressing over the cabbage salad and mix well.
8. Serve the spicy salmon alongside the cabbage salad and enjoy!
