Ingredients:
- 1 kg lamb shank - 2 tbsp olive oil
- 2 onions, chopped
- 3 garlic cloves, crushed
- 4 carrots, diced
- 4 potatoes, diced
- 3 dl beef broth
- 1 dl red wine
- 2 tbsp fresh rosemary
- 2 tbsp fresh thyme
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot. Sear the lamb shank on all sides until browned.2. Add the chopped onions and crushed garlic, sauté for a few minutes until softened.
3. Stir in the diced carrots and potatoes, mixing well.
4. Pour in the beef broth and red wine. Add the rosemary and thyme.
5. Season with salt and pepper. Bring to a boil, cover, and simmer on low heat for about 2.5 hours until the meat is tender.
6. Serve warm, ideally with fresh bread.
