Ingredients:
- 800 g game meat (such as elk or deer) - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, sliced
- 2 celery stalks, chopped
- 250 g mushrooms, sliced
- 500 ml red wine (such as Valpolicella)
- 300 ml beef broth
- 2 bay leaves
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the game meat and brown it until golden. Remove the meat from the pot and set it aside. 2. Add the onion, garlic, carrots, and celery to the pot. Sauté the vegetables for about 5-7 minutes until they soften.
3. Stir in the mushrooms and continue cooking for a few more minutes.
4. Pour the red wine and beef broth into the pot. Return the browned game meat to the pot.
5. Add the bay leaves, thyme, rosemary, salt, and pepper. Mix well.
6. Bring the mixture to a boil, then reduce the heat. Allow the stew to simmer gently with the lid on for about 1.5 hours, until the meat is tender.
7. Remove the bay leaves before serving. Garnish with fresh parsley and enjoy the stew warm.
