Ingredients:
- 4 slices of whole grain bread- 200 g avocado
- 4 eggs
- 100 g smoked salmon
- 1 dl sour cream
- 1 tbsp lemon juice
- 1/2 red onion
- 1/2 dl fresh dill
- Salt and pepper to taste
- Salad mix for serving
Instructions:
1. Toast the whole grain bread slices until golden brown.2. Mash the avocado and mix in the lemon juice, salt, and pepper.
3. Boil the eggs to your desired doneness (about 6-8 minutes for soft-boiled).
4. Chop the red onion and finely chop the dill.
5. In a bowl, combine the sour cream, red onion, dill, salt, and pepper.
6. Spread the avocado mixture on the toasted bread, top with smoked salmon and boiled eggs.
7. Spoon the sour cream mixture over the servings and serve with a salad mix.
