A delicious and nourishing soup made with fresh mushrooms and vegetables. Perfect as a light lunch or dinner.

Ingredients:

- 300 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 3 potatoes
- 1 liter vegetable broth
- 200 ml heavy cream
- 2 tablespoons butter
- Salt and black pepper to taste
- Fresh herbs (e.g., parsley or thyme) for garnish

Instructions:

1. Peel and chop the onion, garlic, and potatoes.
2. Clean and chop the mushrooms.
3. Heat the butter in a pot and sauté the onion and garlic until soft.
4. Add the potatoes and mushrooms, and sauté for a moment.
5. Pour the vegetable broth into the pot and cook for about 15 minutes, until the potatoes are tender.
6. Blend the soup with an immersion blender until smooth.
7. Stir in the cream and heat for a moment longer. Season with salt and pepper.
8. Serve hot, garnished with fresh herbs.
