A delightful creamy soup featuring chanterelle mushrooms for a unique flavor. This quick and delicious soup can be prepared in under 30 minutes.

Ingredients:
- 400 g chanterelle mushrooms
- 1 onion
- 2 garlic cloves
- 500 ml vegetable broth
- 200 ml heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Sunflower seeds (for garnish)
- Watercress (for garnish)
Instructions:
1. Peel and chop the onion and garlic.
2. Heat olive oil in a pot and add the onion and garlic. Sauté for about 5 minutes until softened.
3. Add the chopped chanterelle mushrooms to the pot and cook for about 5-7 minutes until the mushrooms are tender.
4. Pour in the vegetable broth and let it simmer for 10 minutes.
5. Blend the soup with an immersion blender or in a regular blender until smooth.
6. Stir in the heavy cream and season with salt and pepper. Heat the soup again but do not boil.
7. Serve the soup in bowls and garnish with toasted sunflower seeds and watercress.
