A simple and delicious mushroom soup utilizing the rich flavors of porcini mushrooms and cream. Perfect for a cozy autumn meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g porcini mushrooms (or other mushrooms)- 2 potatoes
- 1 onion
- 2 tablespoons butter
- 1 liter vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and dice the potatoes. Chop the onion and mushrooms.2. Heat the butter in a pot and sauté the onion until it becomes soft.
3. Add the mushrooms and cook for a few minutes until they start to brown.
4. Stir in the diced potatoes and vegetable broth. Cook for about 15-20 minutes until the potatoes are tender.
5. Blend the soup with an immersion blender or in a regular blender until it is silky smooth.
6. Add the cream and heat the soup again. Season with salt and pepper.
7. Serve the soup garnished with fresh parsley.
