Ingredients:
- 1 clove garlic, minced
- 1 cup water
- 2 tablespoons cooking oil
- 2 tablespoons ginger, grated
- 1 shallot, finely chopped
- 0.5 teaspoon Sichuan peppercorns
- 2 tablespoons Shaoxing rice wine (or dry sherry)
- 1 tablespoon sugar
- 200 g duck feet
- 2 teaspoons soy sauce
- 2 dried red chilies
Instructions:
1. Toast the Sichuan peppercorns and dried chilies in a pan over medium heat until fragrant. Let cool and crush into a fine powder.
2. Heat the cooking oil in a large pan. Add the minced garlic, grated ginger, and chopped shallot. Sauté until the onions are soft.
3. Add the crushed Sichuan pepper and chilies to the pan, mixing well.
4. Pour in the water and Shaoxing rice wine. Add the sugar and soy sauce. Let the sauce simmer on low heat for about 5 minutes.
5. Add the duck feet to the pan and stir well to coat them in the sauce. Allow to cook for another 10-15 minutes, until the duck feet are tender and the sauce has thickened slightly.
6. Serve hot with rice or steamed vegetables.
