Chicken Pineapple Sauce with Rice

A delightful combination of chicken, pineapple, and cream served over rice. Preparation Time: 30 minutes
Serving Size: 2 servings
Ingredients:
- 200 g cooked rice
- 150 g chicken fillet
- 1 red bell pepper
- 1 onion
- 1 can of pineapple (slices or chunks)
- 2 dl heavy cream
- Salt and pepper to taste
- Oil for frying
Instructions:
1. Peel and chop the onion and bell pepper.
2. Heat oil in a frying pan and add the onion. Sauté until soft.
3. Add the chicken fillet to the pan, season with salt and pepper, and cook until the fillets are done.
4. Add the bell pepper and pineapple to the pan. Mix and cook for a few minutes.
5. Pour the cream over the mixture and let it simmer on low heat for about 5-10 minutes, until the sauce thickens slightly.
6. Serve the sauce over the cooked rice.
