A delicious and easy-to-make curry chicken dish that combines chicken, vegetables, and a flavorful sauce. Perfect for a weekday dinner when served with rice.Preparation Time: 1 hour

Ingredients:
- 4 chicken breast fillets - 500 g mixed frozen asparagus, cauliflower, and carrots
- 2 onions, chopped
- 4 garlic cloves, crushed
- 1 cup heavy cream or 200 ml plain yogurt
- 1 cup onion-flavored cream cheese (like Creme Bonjour)
- 1 jar (100 g) red curry paste
- 1 tablespoon herbs
- Salt
- Black pepper
Instructions:
1. Chop the onions and place them at the bottom of a baking dish. Add the crushed garlic cloves.2. Place the chicken fillets on top of the onion mixture.
3. In a bowl, mix the heavy cream, curry paste, and cream cheese. Pour the mixture over the chicken.
4. Sprinkle the herbs and season with salt and black pepper.
5. Bake in a preheated oven at 200°C (392°F) for about 1 hour, or at 175°C (347°F) in a convection oven.
6. Cook rice according to package instructions and serve the curry chicken with it.
