Ingredients:
- 1 cup millet - 4 cups water
- 1 cup cherry tomatoes, halved
- 1 onion, chopped
- 2 eggs
- Salt and pepper to taste
- Olive oil for frying
Instructions:
1. Rinse the millet under cold water. Cook the millet in water for about 15-20 minutes until tender. Drain any excess water. 2. Heat olive oil in a frying pan over medium heat. Add the chopped onion and sauté until softened.
3. Add the cherry tomatoes to the pan and cook for a few minutes until they start to soften.
4. Push the onion and tomatoes to the side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked.
5. Add the cooked millet to the pan and mix all ingredients well. Season with salt and pepper.
6. Fry for a few more minutes until everything is heated through and well combined.
7. Serve immediately.
