Ingredients:
- 400 g spaghetti - 150 g bacon or guanciale
- 3 egg yolks
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (chopped)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.2. Once the pasta is cooked, reserve about 1 cup of the pasta cooking water and drain the rest.
3. In a skillet, heat the bacon or guanciale over medium heat until crispy. Add the chopped garlic and sauté for another minute.
4. In a bowl, mix the egg yolks, grated Parmesan cheese, salt, and black pepper. Add a little bit of the reserved pasta water to create a creamy mixture.
5. Add the drained pasta to the skillet with the bacon and mix well. Remove the skillet from heat and quickly stir in the egg mixture to the pasta. Mix swiftly to prevent the eggs from scrambling.
6. Serve immediately, garnished with fresh parsley.
