A delicious way to enjoy fresh tomatoes during the autumn season, this casserole is easy to prepare and makes a great addition to any meal.

Ingredients:

- 500 g fresh tomatoes
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 100 g grated cheese
- 1 dl olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 dl fresh herbs (e.g., basil or parsley)

Instructions:

1. Preheat the oven to 180 degrees Celsius.
2. Rinse the tomatoes, slice them, and place them in a baking dish.
3. Peel and chop the onion and garlic. Add them on top of the tomatoes.
4. Rinse the bell pepper, remove the seeds, and cut it into small cubes. Add it to the dish.
5. Pour the olive oil over the mixture and season with salt, black pepper, and oregano. Mix well.
6. Sprinkle the grated cheese over the tomato mixture.
7. Bake in the oven for about 30-40 minutes, until the cheese is golden brown and the tomatoes are cooked.
8. Remove the dish from the oven and garnish with fresh herbs before serving.
