A delicious cabbage stew perfect for fall, packed with flavor and nutrients, and easy to make in one pot.

Ingredients:

- 1 kg green cabbage, shredded
- 2 medium onions, diced
- 2 carrots, sliced
- 3 garlic cloves, crushed
- 400 g canned crushed tomatoes
- 500 ml vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika

Instructions:

1. Heat the olive oil in a large pot over medium heat.
2. Add the onions and garlic, sauté for about 5 minutes until soft.
3. Add the carrots and cabbage, stirring well and cooking for an additional 5-7 minutes.
4. Pour in the crushed tomatoes and vegetable broth, then add salt, pepper, oregano, and paprika.
5. Stir all the ingredients together and let the stew simmer for about 25-30 minutes, until the cabbage is tender.
6. Taste and adjust seasoning if necessary.
7. Serve warm.
