A delicious tomato soup that's perfect for lunch or dinner, warming both the mind and body. Easy to make and loved by all! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 800 g crushed tomatoes - 1 onion
- 2 garlic cloves
- 1 tbsp olive oil
- 500 ml vegetable broth
- 1 tbsp sugar
- Salt to taste
- Pepper to taste
- Fresh basil for garnish
Instructions:
1. Peel and chop the onion and garlic. 2. Heat the olive oil in a pot over medium heat. Add the onion and garlic, sautéing for about 5 minutes until softened.
3. Pour the crushed tomatoes into the pot and add the vegetable broth. Stir well.
4. Add the sugar, salt, and pepper. Let the soup simmer on low heat for about 15-20 minutes.
5. Blend the soup with an immersion blender or in a countertop blender until completely smooth.
6. Reheat the soup if necessary and serve with fresh basil on top.
