Ingredients:
- 2 tablespoons oil- 1/2 green bell pepper (chopped)
- 1 onion (chopped)
- 3-4 garlic cloves (minced)
- 5 slices of bacon (chopped, omit for vegetarian version)
- 1 teaspoon cumin
- 2 teaspoons oregano
- 1 bay leaf
- 1 1/4 cups long-grain white rice
- 2 cups water
- 1 can black beans (undrained)
- 2 tablespoons red wine vinegar
- Salt (to taste)
Instructions:
1. Heat the oil in a large skillet over medium heat and sauté the chopped bell pepper and onion for about 5 minutes.2. Add the chopped bacon and cook until the fat has rendered.
3. Stir in the rice and sauté for a moment.
4. Add the cumin, oregano, bay leaf, and water. Mix well.
5. Cover the skillet and simmer the rice until it is nearly cooked.
6. Stir in the black beans with their liquid and the red wine vinegar. Continue to simmer until the rice is fully cooked and the liquid is absorbed.
7. Taste and adjust salt if needed.
