A quick and delicious rice dish made with ready-to-eat pulled chicken and fresh vegetables. Perfect for busy weeknight dinners.

Serving Size: 4 servings

Ingredients:

- 300 g prepared pulled chicken
- 2 dl rice
- 4 dl water
- 1 bell pepper
- 1 small zucchini
- 1 red onion
- 2 garlic cloves
- 2 tbsp oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Instructions:

1. Peel and chop the red onion and garlic. Dice the bell pepper and zucchini.
2. Heat the oil in a large skillet over medium heat. Add the onion and garlic, sautéing for about 2-3 minutes.
3. Add the bell pepper and zucchini, and continue to cook for another 5 minutes until the vegetables soften.
4. Stir in the rice, mixing it well with the vegetables.
5. Pour in the water and add the pulled chicken. Season with salt and pepper.
6. Allow the dish to simmer on low heat with a lid for about 15 minutes, until the rice is cooked and the liquid is absorbed.
7. Serve the dish hot and garnish with fresh parsley if desired.
