A delicious Thai green chicken dish with fresh vegetables.
Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 4 dl water
- 1 tbsp rice bran oil
- 10 small green tomatoes
- 2 tsp coarse sea salt
- 2 dl fresh peas
- 3-4 dl coconut milk
- Fresh coriander roots and leaves
- 2-3 cucumbers
- 6 Thai eggplants
- 3 chicken thighs, cleaned
Instructions:
1. Heat the rice bran oil in a large pot over medium heat.
2. Add the chicken thighs and cook until they are golden brown.
3. Pour in the water, add the green tomatoes and sea salt. Simmer on low heat for about 20 minutes.
4. Stir in the coconut milk, fresh peas, and coriander. Allow to simmer for another 10 minutes.
5. Meanwhile, slice the cucumbers and Thai eggplants.
6. Serve the chicken with the green sauce, garnished with cucumber slices and Thai eggplants.
