A delicious and aromatic dish featuring tender duck cooked in a rich red curry sauce with lychee and Thai basil. Preparation time: 45 minutes
Serving size: 2
Ingredients:
- 1 dl lychee syrup
- ½ ripe duck
- 2 dl chicken broth
- 1 tbsp Thai red curry powder
- ½ tbsp rice bran oil
- 2 servings jasmine rice
- 8 - 10 lychee fruits, pitted
- 1 dl coconut milk
- 2 tbsp chopped Thai basil
- 1 tsp nam pla (fish sauce)
Instructions:
1. Cook jasmine rice according to package instructions.
2. Heat rice bran oil in a pan over medium heat.
3. Add the duck to the pan and sear until golden brown.
4. Pour in the chicken broth, lychee syrup, red curry powder, and coconut milk. Mix well.
5. Add the lychee fruits and let the dish simmer on low heat for about 15-20 minutes.
6. Stir in the chopped Thai basil and nam pla. Heat for a moment longer.
7. Serve the duck with jasmine rice.
