A delicious and filling Thai dish that combines rice noodles, vegetables, and protein. This recipe is a great way to utilize leftover meats such as chicken. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g rice noodles- 200 g chicken or other leftover meat (e.g., pork)
- 2 tablespoons oil
- 2 garlic cloves, minced
- 2 eggs
- 1 bell pepper, sliced
- 1 carrot, sliced
- 100 g bean sprouts
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons peanuts, crushed
- Fresh cilantro for garnish
- Lime juice (optional)
Instructions:
1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.2. Heat the oil in a wok or large skillet over medium heat.
3. Add the minced garlic and sauté briefly until fragrant.
4. Add the chicken or leftover meat and cook until fully cooked.
5. Crack the eggs into the pan and scramble until cooked through.
6. Add the sliced vegetables to the pan and stir-fry for a few more minutes.
7. Add the cooked noodles, fish sauce, and sugar. Mix well and stir-fry for another few minutes.
8. Garnish with crushed peanuts and fresh cilantro. Serve with lime juice if desired.
