Ingredients:
- 200 g rice noodles
- 200 g shrimp
- 2 tablespoons oil
- 2 garlic cloves, minced
- 1 red chili, sliced
- 2 eggs
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- Juice of 1 lime
- 100 g peanuts, chopped
- 2 green onions, sliced
- Fresh cilantro, for garnish
Instructions:
1. Cook the rice noodles according to the package instructions, drain and set aside.
2. Heat the oil in a wok over medium heat, add the minced garlic and sliced chili. Sauté for a moment until fragrant.
3. Add the shrimp to the pan and cook until they are pink and opaque.
4. Push the shrimp to the side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked.
5. Add the cooked noodles to the pan and toss everything together well.
6. Pour in the fish sauce, sugar, and lime juice. Stir and cook for a few more minutes.
7. Add the chopped peanuts and green onions, mixing everything well.
8. Serve hot, garnished with fresh cilantro.
