A quick and easy noodle bowl that's light, healthy, and packed with flavor. Perfect for a weekday lunch!

Ingredients:
- 200 g rice noodles
- 1 tbsp oil (e.g., sesame oil)
- 1 carrot, julienned
- 1 bell pepper, julienned
- 100 g peas (fresh or frozen)
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp sesame seeds
- Fresh cilantro or parsley for garnish
Instructions:
1. Cook the rice noodles according to package instructions. Drain and rinse with cold water.
2. Heat the oil in a skillet over medium heat. Add the julienned carrots and bell peppers, and sauté for about 3-5 minutes until they soften.
3. Add the peas and green onions to the skillet, and cook for a few more minutes.
4. Stir in the cooked noodles, soy sauce, and lime juice. Mix well and heat everything together for another few minutes.
5. Serve in bowls and sprinkle with sesame seeds and fresh cilantro or parsley.
