Ingredients:
- 500 g chicken fillets - 2 tbsp yellow curry paste
- 1 can coconut milk (400 ml)
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 garlic cloves
- 1 tbsp oil
- 1 tbsp fish sauce
- 1 tbsp sugar
- Fresh cilantro (for garnish)
- Salt and pepper to taste
Instructions:
1. Peel and chop the onion and garlic.2. Cut the chicken fillets into bite-sized pieces.
3. Heat the oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 2-3 minutes.
4. Add the chicken pieces and cook until golden brown.
5. Stir in the yellow curry paste and mix well.
6. Pour the coconut milk into the skillet and stir to combine.
7. Add the chopped bell peppers, fish sauce, and sugar. Allow to simmer on low heat for about 10 minutes.
8. Season with salt and pepper. Serve garnished with cilantro.
