A flavorful and aromatic dish featuring tender chicken seasoned with Thai yellow curry, served over fluffy jasmine rice.

Ingredients:

- 2 tablespoons lemon juice
- 5 chicken fillets
- 1.5 tablespoons Thai yellow curry powder
- 2 cups jasmine rice
- 0.5 teaspoon salt
- Canola oil

Instructions:

1. Drizzle the chicken fillets with lemon juice and let them marinate for 10 minutes.
2. Heat canola oil in a frying pan over medium heat.
3. Sear the chicken fillets until golden brown on both sides.
4. Remove the fillets from the pan and rub the Thai yellow curry powder over them.
5. Place the fillets in a preheated oven at 200°C (about 400°F) and bake for approximately 15 minutes.
6. Lightly season with salt.
7. Cook the jasmine rice according to the package instructions.
8. Serve the chicken alongside the jasmine rice.
