A quick and delicious vegetable pasta recipe that's perfect for a weeknight dinner.

Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and save a little cooking water.
2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until soft.
3. Add bell pepper and zucchini to the skillet, cook for about 5 minutes until the vegetables are tender.
4. Stir in cherry tomatoes and oregano, mix well and cook for another few minutes.
5. Combine the cooked pasta with the vegetable mixture. If needed, add a bit of reserved cooking water to prevent the pasta from drying out.
6. Season with salt and pepper. Serve with grated Parmesan cheese and fresh basil on top.
