Oven-Roasted Chicken with Side Potatoes

Description: A succulent roasted chicken seasoned with garlic, herbs, and lemon, served alongside perfectly roasted potatoes.
Preparation Time: 2 hours (including marinating time)
Serving Size: 4-6 servings
Ingredients:
- 1 whole organic chicken
- 2-3 tablespoons olive oil
- 8 cloves garlic, roughly chopped
- Salt to taste
- Black pepper to taste
- Fresh or dried rosemary or thyme
- Juice and zest of 1/2 lemon
- A few pats of butter
- 12 medium-sized potatoes, washed
Instructions:
1. If the chicken is frozen, thaw it in the refrigerator the day before. On the cooking day, let the chicken come to room temperature before placing it in the oven.
2. Peel and roughly chop the garlic cloves. Zest the lemon. Wash the potatoes thoroughly without peeling. Halve them if needed, sprinkle with salt, and toss in olive oil.
3. Rub the chicken with olive oil, salt, black pepper, rosemary or thyme, and lemon zest. Place the chicken in a roasting pan and distribute the garlic over the chicken, under the skin, and at the bottom of the pan.
4. Squeeze the lemon juice over the chicken and add a few pats of butter on top. Arrange the potatoes around the chicken in the pan.
5. Roast in a preheated oven at 175°C (350°F) for about 1.5 hours, until the chicken is cooked through and has a beautiful golden color. If necessary, add water to the bottom of the pan during roasting if the juices begin to evaporate.
